DARK SAKURA

Japanese BBQ Sauce

Dark Sakura takes inspiration from Japanese izakayas (pubs) where skewers are grilled over charcoal and basted with a special sauce called Taré. Each izakaya makes their own Taré and is a closely guarded secret.

Dark Sakura is our take made with bonito flakes, seaweed and brown sugar as a base to keep with tradition. Soy sauce, shiitake extract and rice vinegar are added to give it complexity and balance. Mulled vinegar is also present, and this ingredient serves to elevate all the flavours of this sauce, as well as enhance the dish to which it is added. And lastly, a hint of yuzu (Japanese citrus) is infused to add a delicate floral note.

This sauce will pair perfectly with any fish, meat and vegetables. Suggested use would be to baste while grilling, or as a dipping sauce.

RED DIABLO

Spanish Hot Sauce

A Spanish inspired base crafted from smoked paprika and vinegar, married with ingredients from Mexican and Chinese cuisine. This concoction is a potent savoury condiment with a mild, non-lingering heat.

For those sensitive to spice, worry not! This is a flavour driven condiment who’s heat won’t hurt the palate. There’s a lot of flavour on this sauce, but despite that, it doesn’t overpower the food, it just makes it taste better.

Best used as a finishing component, try drizzling it over rice, or roasted vegetables. If you like seafood, then you’ll love this sauce! Try it on grilled, roasted and even raw seafood, especially raw oysters.


BLACK MAPLE

Smokey Maple Marinade

Smoke, maple syrup and a secret vinegar. Those are the 3 ingredients in this sauce balanced perfectly to enhance any dish you want to flavour.

Our secret vinegar took years to develop and was chosen specifically for its flavour enhancing characteristics. This non-acidic vinegar does not taste like your normal vinegar. In fact, it doesn’t taste like vinegar at all. It just enhances the inherent flavours in your food.

On its own, Black Maple will initially impart its smokey flavour, followed by sweet and savoury notes with a lingering umami taste. Use it in marinades, salad dressings, sauce reductions and any savoury dish you want to enhance. The most delicious food to use it with is meat and seafood.
