Scallop Ceviche

Ingredients:

  • 8-10 pcs large scallops

  • 2 tbsp Red Diablo

  • 1 lime, juiced

  • 1 citrus fruit of your choice, skin removed and cut thinly, we used a key lime here

  • Salt to taste

  • Extra virgin olive oil

  • Mint & cilantro for garnish

Instructions:

  1. Place the scallops on a bowl and pour the lime and Red Diablo. Let the scallops cure for 4-6 hours

  2. Slice the scallops into disks. Make sure your knife is very sharp!

  3. Cut the top and bottom of the citrus fruit away and then cut off the skin. Cit the citrus into thin slices

  4. Lay the disks on a plate. Drizzle more Red Diablo and olive oil. Salt to taste

  5. Garnish with mint and cilantro
